- Prepare 1000 grams of chopped plums.
- You need 250 grams of golden caster sugar.
- It's 1 of vanilla pod, halved and the seeds scraped out.
- It's 1 of cinnamon stick.
- You need 225 ml of water.

- Put the water, sugar, cinnamon stick and vanilla pod & seeds into a medium sized saucepan and simmer until the sugar has dissolved.
- Carefully add in the chopped plums, bring to the boil then turn down and simmer for 10 minutes until softened.
- Strain the liquid into another pan and boil / reduce until thick and syrupy, discarding the vanilla pod and cinnamon stick.
- Stir the plums back into the syrup and serve with some plain yogurt such as Koko free-from dairy & soya coconut based brand.
