  1. Prepare 1000 grams of chopped plums.
  2. You need 250 grams of golden caster sugar.
  3. It's 1 of vanilla pod, halved and the seeds scraped out.
  4. It's 1 of cinnamon stick.
  5. You need 225 ml of water.

  1. Put the water, sugar, cinnamon stick and vanilla pod & seeds into a medium sized saucepan and simmer until the sugar has dissolved.
  2. Carefully add in the chopped plums, bring to the boil then turn down and simmer for 10 minutes until softened.
  3. Strain the liquid into another pan and boil / reduce until thick and syrupy, discarding the vanilla pod and cinnamon stick.
  4. Stir the plums back into the syrup and serve with some plain yogurt such as Koko free-from dairy & soya coconut based brand.
